【職務說明書內容】 本職位最重要工作目標為讓央廚前置準備的所有食材在最後讓不同店家在享用餐點時可以品嘗到同樣美味又安全的標準化、一致化的品質把關。 1. 各種地中海料理食材準備、烹飪、調理、清洗、剝、削、切、以及成品包裝。 2. 依標準協助測量食材的容量與重量。 3. 配料前置作業-依食譜規定之比例調配醬料、調理包 。 4. 保持與供應商間之聯繫,並確認食材備品交貨期 5. 日常廚房環境清理、設備維護及餐具整潔。 6. 確保製作食品流程均符合食品衛生管理的規定。 7. 其他基礎行政庶務作業。 【工作條件】 1. 熟悉基礎廚房備料工作技能 2. 嚴謹細心可確實依循標準作業流程執行 3. 具管理中央廚房流程工作經驗者尤佳。 4. 具備食材保存基礎食品衛生安全觀念知識。 5. 兼具中英文良好溝通能力。 【工作時間】 上班時間為上午0700-1530(中間休息吃飯半小時) 工作地點:台北市松山區五常街277號 【休假制度】 四周變形工時排班時數須滿160小時,四週內月休8天、國定假日另計、生日還有生日有薪假,年假特休比照勞基法,個人每個月可以指定4天(2天平日2天假日) ※工作環境有中央空調不悶熱 ※皆提供每日幸福餐點讓上班有好的體力 【Big Big Central Kitchen Chef Position Responsibility and Obligation Analysis】 【Content of job description】 The most important job goal of this position is to let all the ingredients prepared by the central chef at the end allow different restaurants to taste the same delicious and safe standardized and consistent quality control when enjoying meals. 1. Preparation, cooking, conditioning, cleaning, stripping, cutting, and packaging of various Mediterranean cuisine ingredients. 2. Follow the standard to assist in measuring the volume and weight of ingredients. 3. Ingredients pre-operation-prepare sauces and preparation packages in accordance with the proportion specified in the recipe. 4. Maintain contact with suppliers and confirm the delivery date of ingredients and spare parts 5. Daily kitchen environment cleaning, equipment maintenance and tableware tidy. 6. Ensure that the food preparation process complies with food hygiene management regulations. 7. Execute the task given by the supervisor 【Working conditions】 1. Familiar with basic kitchen material preparation skills 2. Strict and meticulous, and can be implemented in accordance with standard operating procedures 3. Experience in managing central kitchen processes is preferred. 4. Familiar with the knowledge of basic food hygiene and safety concepts for food preservation. 5. Good communication skills in both Chinese and English. 【Holiday rules】 1. Must take at least 8 days off within four weeks (4 daily holidays+4 rest days) 2. If a national holiday is encountered within four weeks, the holiday will be moved within the 4-week shift schedule interval
